  • 3 lb beef tongue
  • 1 onion (quartered)
  • 4 clove garlic
  • 2 bay leaves
  • 1 tsp cumin
  • 16 corn tortillas (warmed, doubled)
  • ½ white onion (finely diced)
  • ½ cup fresh cilantro
  • 1 cup tomatillo salsa
  • 4 lime wedges

How to Make It

    Simmer beef tongue in a pot with onion, garlic, bay leaves, and cumin, covered with water, for 2.5-3 hours.

    Remove tongue and cool slightly. Peel off the outer skin while warm.

    Dice or slice the tender meat.

    Crisp the chopped tongue in a hot skillet with a little oil.

    Serve in doubled corn tortillas with white onion, cilantro, salsa verde, and lime.
