Chicken Fried Rice

Ingredients

4 servings
  • 4 cup day-old cooked white rice (cold)
  • 1 lb chicken breast (diced small)
  • 3 eggs
  • 1 cup frozen peas and carrots
  • 4 green onions (sliced)
  • 3 clove garlic (minced)
  • 1 tsp ginger (freshly grated)
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 3 tbsp vegetable oil

How to Make It

    Heat a wok or large skillet over very high heat. Add 1 tbsp oil.

    Cook chicken until browned and cooked through. Remove and set aside.

    Add remaining oil. Stir-fry garlic and ginger 30 seconds. Add peas and carrots, cook 2 minutes.

    Push vegetables to one side. Scramble eggs in the other half, then mix together.

    Add cold rice and stir-fry vigorously, breaking up clumps, 3-4 minutes.

    Return chicken. Add soy sauce and sesame oil. Toss to combine. Top with green onions and serve.
