  • 4 large flour tortillas
  • 2 cup cooked chicken breast (shredded)
  • 1 ½ cup Monterey Jack cheese (shredded)
  • 1 red bell pepper (thinly sliced)
  • ½ onion (thinly sliced)
  • 1 tsp chili powder
  • ½ tsp cumin
  • 2 tbsp olive oil
  • ½ cup sour cream and salsa (for serving)

How to Make It

    Sauté pepper and onion in olive oil with chili powder and cumin until softened, 5 minutes.

    Mix cooked chicken with pepper and onion mixture.

    Heat a large skillet over medium heat. Place one tortilla in the skillet.

    Sprinkle half the tortilla with cheese, then chicken mixture, then more cheese. Fold tortilla in half.

    Cook 2-3 minutes per side until golden and crispy. Repeat with remaining tortillas.
