  • 24 littleneck clams (on the half shell)
  • 4 slice bacon (finely diced)
  • ½ red bell pepper (finely diced)
  • ½ green bell pepper (finely diced)
  • 1 shallot (minced)
  • 2 clove garlic (minced)
  • ½ cup panko breadcrumbs
  • 3 tbsp Parmesan cheese (grated)
  • 2 tbsp butter
  • 1 tbsp lemon juice

How to Make It

    Cook bacon until crispy. Remove and drain, leaving 1 tbsp fat in pan.

    Sauté peppers, shallot, and garlic in bacon fat until softened. Cool.

    Mix cooked vegetables, bacon, breadcrumbs, Parmesan, butter, and lemon juice.

    Arrange clams on a foil-lined baking sheet. Top each with a spoonful of filling.
