Ingredients

8 servings
  • 3 lb whole chicken or bone-in chicken parts
  • 4 carrots (sliced)
  • 4 celery (stalks, sliced)
  • 1 onion (quartered)
  • 4 clove garlic
  • 2 cup egg noodles
  • 4 fresh thyme (sprigs)
  • 2 bay leaves
  • ΒΌ cup fresh parsley (chopped)
  • 2 tsp salt and pepper

How to Make It

    Place chicken in a large pot with onion, garlic, half the celery and carrots, thyme, and bay leaves. Cover with cold water.

    Bring to a boil, skim foam. Reduce heat and simmer 1 hour until chicken is very tender.

    Remove chicken and cool slightly. Strain broth and discard vegetables and herbs.

    Shred chicken, discarding bones and skin.

    Return broth to pot. Add fresh carrots and celery. Simmer 10 minutes.

    Add noodles and cook until tender. Return chicken, season generously. Garnish with parsley.
