- 1 ΒΌ cup buttermilk
- 1 egg
- 3 tbsp butter (melted)
- 2 tbsp sugar
- 1 Β½ tsp baking powder
- Β½ tsp baking soda
- Β½ tsp salt
- 1 tsp vanilla extract
- 2 tbsp butter and maple syrup (for serving)
How to Make It

Whisk together flour, sugar, baking powder, baking soda, and salt.

In another bowl, mix buttermilk, egg, melted butter, and vanilla.

Pour wet ingredients into dry and stir until just combined β lumps are fine, do not overmix.

Rest batter 5 minutes.

Heat a buttered griddle over medium heat. Pour 1/4 cup batter per pancake. Cook until bubbles form and edges look set, about 2-3 minutes. Flip and cook 1-2 minutes more.
