Ingredients

  • 1 ½ cup red lentils (rinsed)
  • 1 onion (diced)
  • 2 carrots (diced)
  • 4 clove garlic (minced)
  • 2 tsp cumin
  • 1 tsp coriander
  • ½ tsp turmeric
  • 6 cup vegetable broth
  • 3 tbsp lemon juice
  • 3 tbsp olive oil
  • ¼ cup fresh parsley

How to Make It

    Sauté onion and carrots in olive oil 5 minutes. Add garlic and spices, cook 1 minute.

    Add lentils and broth. Bring to a boil.

    Reduce heat and simmer 20-25 minutes until lentils are completely soft.

    Blend until smooth with an immersion blender.

    Stir in lemon juice. Season generously with salt.

    Serve with a drizzle of olive oil, parsley, and crusty bread.
