Ingredients

4 servings
  • 4 fillets salmon (skin-on, about 6oz each)
  • 3 tbsp white miso paste
  • 2 tbsp mirin
  • 1 tbsp sake (or dry sherry)
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tbsp honey
  • 2 green onions (sliced, for serving)
  • 1 tsp sesame seeds (for serving)

How to Make It

  1. 1

Whisk together miso, mirin, sake, soy sauce, sesame oil, and honey until smooth.

  2. 2

Pat salmon dry and place in a shallow dish. Coat all over with the miso glaze. Marinate for at least 30 minutes, or up to 24 hours in the fridge.

  3. 3

Position oven rack 6 inches from broiler and preheat broiler to high. Line a baking sheet with foil.

  4. 4

Place salmon skin-side down on the prepared sheet. Broil for 8–10 minutes until glaze is caramelized and fish flakes easily. Watch carefully — the miso can burn quickly.

  5. 5

Serve over steamed rice, topped with green onions and sesame seeds.
