  • 2 cup graham crackers (crushed into crumbs)
  • 5 tbsp butter (melted)
  • 32 oz cream cheese (4 blocks, room temperature)
  • 1 ¼ cup granulated sugar
  • ½ cup sour cream
  • ½ cup heavy cream
  • 4 eggs (room temperature)
  • 1 tbsp vanilla extract
  • 1 tbsp lemon juice

How to Make It

    Mix crumbs with melted butter. Press into a greased 9" springform pan. Bake at 325°F for 10 minutes.

    Beat cream cheese until completely smooth. Gradually beat in sugar.

    Mix in sour cream, cream, vanilla, and lemon juice. Beat in eggs one at a time on low speed.

    Pour over crust. Wrap pan in foil. Bake in a water bath at 325°F for 75-80 minutes until set but with a slight jiggle in center.

    Turn off oven, crack door, and let cool 1 hour inside oven.
