- 3 lb beef bones (marrow and knuckle bones)
- 1 lb beef brisket
- 1 lb rice noodles (pho noodles)
- 1 onion (halved and charred)
- 3 ginger (slices, charred)
- 4 star anise
- 1 cinnamon stick
- 3 tbsp fish sauce
- 1 tsp sugar
- 2 cup bean sprouts
- 1 cup fresh basil and mint
- 1 lime wedges, hoisin, and Sriracha (for serving)
How to Make It

Blanch bones in boiling water 10 minutes. Drain and rinse.

Char onion and ginger directly over a gas flame or under broiler.

Simmer bones, brisket, charred onion, ginger, star anise, and cinnamon in 12 cups water 3 hours.

Remove brisket after 1.5 hours when tender. Slice thinly.

Strain broth and season with fish sauce, sugar, and salt.

Cook noodles. Place in bowls, top with sliced brisket and hot broth. Serve with sprouts, herbs, lime, hoisin, and Sriracha.
