  • 2 cup all-purpose flour
  • 4 tbsp vegetable oil (for dough)
  • ½ cup cold water
  • 3 russet potatoes (boiled and mashed)
  • ½ cup frozen peas
  • 1 tsp cumin seeds
  • 1 tsp ginger (grated)
  • 1 tsp garam masala
  • 1 tsp coriander
  • 1 tsp amchur or lemon juice
  • 3 cup vegetable oil (for frying)

How to Make It

    Make dough: mix flour, salt, and oil until crumbly. Add water gradually. Knead 5 minutes. Rest 30 minutes.

    Make filling: sauté cumin seeds until they pop. Add ginger and spices. Mix in potatoes, peas, and amchur. Cool.

    Divide dough into balls. Roll each into an oval, cut in half.

    Form each half into a cone, fill with potato filling, and seal edges with water.

    Fry in 350°F oil until golden, 5-6 minutes.
