Seafood Paella

Ingredients

  • 1 lb large shrimp (shell-on)
  • 1 lb mussels (scrubbed)
  • ½ lb clams
  • ½ lb squid (cleaned and sliced)
  • 2 cup Bomba rice
  • 4 cup fish or chicken broth (warm)
  • ½ tsp saffron (steeped in broth)
  • 1 onion (diced)
  • 4 clove garlic (minced)
  • 1 ½ tsp smoked paprika
  • 1 cup canned tomatoes
  • 3 tbsp olive oil

How to Make It

    Sauté onion and garlic in oil until soft. Add squid and cook 2 minutes.

    Add tomatoes and paprika. Cook 3 minutes.

    Add rice and stir to coat. Add saffron broth. Spread evenly. Do not stir.

    Cook 12 minutes. Nestle shrimp, mussels, and clams into the rice.

    Cover with foil and cook 8-10 minutes until seafood is cooked and mussels open.

    Rest 5 minutes. Discard any unopened shells. Serve with lemon wedges.
