- 6 eggs
- 2 cup canned crushed tomatoes
- 1 onion (diced)
- 1 red bell pepper (diced)
- 3 clove garlic (minced)
- 1 ½ tsp cumin
- 1 tsp paprika
- 4 oz feta cheese (crumbled)
- ¼ cup fresh cilantro
- 2 tbsp olive oil
How to Make It

Sauté onion and pepper in olive oil 5 minutes. Add garlic and spices, cook 1 minute.

Add tomatoes and simmer 10 minutes until thickened.

Make 6 wells. Crack an egg into each. Cover and cook 5-8 minutes until whites are set.

Top with feta and cilantro.

Serve directly from the pan with warm pita.
