Tuscan White Bean Soup

Ingredients

6 servings
  • 1 lb Italian sausage (casings removed)
  • 1 onion (diced)
  • 4 clove garlic (minced)
  • 3 cup cannellini beans (drained and rinsed)
  • 5 cup chicken broth
  • 3 cup kale or spinach (chopped)
  • 1 cup canned diced tomatoes
  • 1 tsp rosemary
  • 1 Parmesan rind
  • ½ tsp red pepper flakes

How to Make It

    Brown sausage in a pot, breaking it up. Drain excess fat.

    Add onion and cook 5 minutes. Add garlic and red pepper flakes, cook 1 minute.

    Add tomatoes, broth, beans, rosemary, and Parmesan rind.

    Simmer 20 minutes. Remove Parmesan rind.

    Mash some beans against the side of the pot to thicken.

    Add kale and cook 5 minutes until wilted. Season and serve with crusty bread.
